Foodie SattvaA Vegetarian Food Trailer with a MissionA foodie is a person with a particular interest in food; a gourmet. Someone like me, who lives to eat and not the other way around, would be described as such.
A Bodhisattva is a figure who has found enlightenment and uses that light to help alleviate the suffering of others. It is a good goal to strive towards, and I figure one of the best ways I could be helpful to society is to provide amazing nutritious food that is accessible to everyone. One of my greatest wishes that I most want to see, is a healed world where all bellies are full and all hearts are content every single day. May there be minimal negative impact on the land and its inhabitants, and maximum positive impact on minds, hearts, and tastebuds. Sattva, in Ayurveda, also means the element or mode of prakriti (Sanskrit: "nature" or "source") associated with purity, wholesomeness, and virtue. The goal is to make nourishing foods that makes people feel good and smile. The vision of Foodie Sattva is to make healthy, plant-based meals available at affordable prices. Ideally, I will offer a free donation-based hot soup kitchen at least once a month, while having the rest of the menu items discounted for that day, to especially cater to those who normally wouldn't want to spend more than $5 on food. Hopefully, it gets to the point where donation-based soup can be offered on a daily basis. Initial profits would be used to grow the brand and make healthy options more widely accessible. By expanding the reach of our product into grocery stores, I believe it will be easier to generate greater revenue as well as set up the brand for future franchising. Once the business is self-sustaining, hopefully within the first two years, all profits and donations would go towards funding community projects, jobs, and resources around the San Luis Valley (one of the poorest regions in Colorado). Starting a healthy mobile kitchen has been a decade long dream for me. Preparing and eating a mostly raw and vegetarian diet during my last years in college had healed my body, mind, and soul. Everyone quickly noticed a lighter and brighter me, I felt super-human. Sharing stories and good food creates connection and love, it is a universal human experience. Eating is a daily practice that brings instant karma in my eyes. When you choose wisely and chew well, you will feel more wise and well. When you share something delicious and wholesome, it is instantly gratifying. All of our menu items have a distinct cultural history from different backgrounds. One bite and you may find yourself being transported to a familiar time and place. Of course, I am always happy to share where I was coming from when I decided to put an item on the menu. |
